Crispy & Stunning Beef Toastie🥪

I hadn’t got much in the fridge yesterday. I sort of threw this together and it worked. I made a note to self to take a pic of the next sandwich to share here. And here it is. My soul food for sleepless nights!

Ingredients

  • Ready‑cooked beef (peppered, or rubbed with crushed black peppercorns)
  • Mature cheddar, grated
  • Mustard, sharp and generous
  • Sourdough or ciabatta bread
  • Salted butter

Method

  1. Butter bread with salted butter.
  2. Layer beef, cheddar, and mustard.
  3. Toast until the bread is crisp, cheese molten, and pepper sings.
  4. Slice, serve hot, and revel in the indulgence.

“Sexy in its ease, stunning in its crisp—bread ritual.”

Today’s blogpost was originally posted March 6, 2019. It is paired with a new guest post abut Margaret Fell which will be posted tomorrow. You can visit the original post here to see the comments.

Pendle Hill will forever be associated to the Pendle Witches of 1612 who live on in the undying soul of the landscape and its folklore and who inspired my 2010 novel, Daughters of the Witching Hill. Pendle Hill also gave birth to the Quaker movement.

For the first time in 600 years, we will experience an eclipse that is the strongest it’s ever been in the last six centuries. The beaver moon this year of 2021 is going to throw a lot of peoples physical energy and emotional energies into an imbalance.

This is a little bit of a change today, as I think Planet Earth is a tad more important than Friday Click & Run. F C&R will be back next week, so get a good post ready to add to it…

With the COP26 conference still going on and the amount of media coverage there is at the moment, we cannot fail to realise that our planet is heating up. Over-use of fossil fuels, methane gas from cows, and de-forestation are the main culprits. We have seen extreme weather this year such as summer temperatures of nearly 50 degrees Centigrade (in Canada), forest wild fires and also flooding. The younger generation are particularly vocal in imploring nations to reduce greenhouse gases, insulate homes, eat less red meat, burn less coal, and stop cutting down trees.

Representatives from bigger nations who rely heavily on coal have been either absent from…
